Vine culture
Short cutting, 6 shoots with 2 eyes. Soil maintenance with plowing, organic fertilizer, ecologic phitosanitary protection.
Winemaking
Resulting of old black grenache vines selection (+ 40 years), we add it a little of Syrah and Carignan. A part of the blend stays 10 months in barrels.
Harvested manually, removed of their stalks, the three varieties grapes macerate separately with traditional method during 4 weeks; punchings regulars during this time to let an exceptional aroma extraction.
Wine tasting
With a deep red color, reveals very ripe red fruits aromas. A lot of volume and well integrated tannins.
Food pairings
Very good pairing with cold cuts, tapas, grilled meats and goat cheeses.
