Vine culture
Short cutting, 6 shoots with 2 eyes. Soil maintenance with plowing, organic fertilizer, ecologic phitosanitary protection.
Winemaking
This Côtes du Roussillon results to a rigorous selection in our old vines.
On this 2 hectares, we have 3 varieties : Syrah is more present, completed with grenache and carignan. A part of the blend stays in barrels in winter.
Harvested manually, removed of their stalks, the three varieties grapes macerate separately with traditional method during 4 weeks; punchings regulars during this time to let an exceptional aroma extraction.
Wine tasting
With a deep red color and a good aroma intensity, ripe red fruits and blackcurrant.
Elegant, hearty, it offers a good expression of the schist soil, sweetness and volume in mouth.
Food pairings
Good pairing with lamb chop, red grilled meats and powerful cheese.
